Cal Pauet

Cal Pauet is a family-run farm (established in 1731) dedicated to organic lamb production. In our on-site butchery, we prepare and season the meat from our Ripollesa breed lambs. We follow a closed-cycle production system, meaning that the entire process — from birth, rearing, and breeding to fattening — takes place entirely on our farm.

Our farm also practices organic crop production, growing heirloom seed varieties, cereals, and legumes for both human and animal consumption, as well as for soil enrichment. This too is a closed-cycle system, from cultivation to the preparation of grains and flours. We also stone-mill our own flours using our in-house mill.
