L’Escairador is a family-run project that has preserved and professionalized the traditional craft of escairador (an old trade related to cereal milling and processing).
We cultivate our own cereals, using heirloom and native varieties. These are non-GMO grains: although their yield in the field is lower than that of commercial varieties, their nutritional and organoleptic properties are unmatched.
The cultivation process avoids the use of non-organic pesticides and biocides, and the fact that all processing is done in our own escairador mill allows us to maintain full control and guarantee the highest quality of our products.
At L’Escairador, we produce gluten-free flours, all stone-ground at low speed to preserve their nutritional and sensory properties as much as possible. The result is flour that is aromatic, flavorful, and healthy — with no preservatives or additives of any kind.
